What is the difference between varying search engines?

I know that they pull up different results (or change the order of them) when you search, but I was wondering why. What sorts them and decides relevancy? What makes certain engines better than others? Which is the best? Why is everyone always using google? What makes bing better, if it is at all? Which do you use the most?

The more times it says whatever you searched, the more relevant it is. also, if the words are completely in order, it will most often come up first.
